How to Store Matcha to Keep It Fresh

Matcha is a little like a cut flower. At its peak it is vibrant and alive, but it fades faster than you might expect if it is not cared for. The good news is that keeping yours fresh is simple once you know what matcha does not like.

Matcha has four quiet enemies: air, light, heat, and moisture. Each one dulls its color and softens its flavor over time.

A few simple habits keep yours at its best.

Keep it airtight. Always reseal your tin or pouch fully after each use. Air is matcha’s fastest route to fading.

Keep it out of the light. Store it in an opaque container, never a clear glass jar on the counter, however pretty that looks.

Keep it cool and dry. A cool, dark cupboard away from the stove is ideal. Heat and humidity are not matcha’s friends.

Keep it away from strong smells. Matcha is porous and will happily absorb the scent of whatever is nearby, so keep it clear of spices and coffee.

A note on the fridge: unopened matcha can rest in the refrigerator for several months. If you do chill it, let the sealed tin come back to room temperature before opening, so condensation does not sneak in.

Once opened, matcha is happiest used within about a month. Treat it gently, and every cup will taste the way the farmer intended.
